Perfect for our Exotic Meat ready rolled Roasts!
Prepare the joint
Before cooking, remove the defrosted meat from its packaging and pat dry with kitchen paper. Allow the meat to come to room temperature in advance or for at least 30 minutes before cooking. This is essential to help the meat cook evenly.
Sear the Joint We recommend searing or browning the joint on all sides in a hot pan, with a small amount of olive oil, before preparing for the oven. This will seal in the juices and tenderness.
Preheat the oven Preheat the oven to 180°C/350°F. Season the joint generously with salt and pepper or other desired seasonings just before before placing into the oven. If desired, place some root vegetables in the bottom of the roasting tray with approximately 200ml of water. Place the roast on top of the vegetables and place into the preheated oven.
Cook to your liking For medium using Red Exotic Meats, cook for approximately 50 minutes, or longer if you prefer your meat more well done. A large joint will continue to rise in temperature by a further 3-5ºC after it is removed from the oven during the resting period, factor this into your cooking times. Be careful not to overcook exotic meats as this will make the meat dry and tough. We recommend cooking red exotic meats to medium for the best eating experience. If you have a meat thermometer we recommend this is used to ensure the meat is cooked to your liking.
Rest your joint Once your joint is cooked to your liking it is important to rest it. Place it on a board or platter, cover with foil, then leave in a warm place for at least 10-15 minutes. Resting is just as important as cooking because it allows the meat to become warm, moist and tender all the way through.
Carving For carving we recommend a large wooden carving board. Ensure your carving knife is very sharp as it makes it much easier to carve neat, even slices. Carve the meat across the grain into slices approximately ½cm or more thick and arrange on a serving dish or individual plates.
