Their low cholesterol and fat, yet high iron content, means you have a fantastic selection to chose from as an alternative to red meats. This is of course one of the main reasons that these meats are increasing in popularity.
For best results do not over cook, simply because there is very little fat within the meat and excessive cooking easily leads to dry and tough meat! We recommend cooking these meats one grade less than you would normally have your red meat cooked. For best results we recommend cooking medium rare to medium (pink in the centre).
