Venison - Red DeerRed Deer is Wild Scottish game at it?s best, these majestic animals dominate the highlands of Scotland and are flourishing in their natural environment. Due to substantial over population a program of balancing out the population has not been in place for some time. This keeps the environmental impact in check while providing a consistent supply of meat. The shooting season in Scotland is stags (males) from July 1st until October 20th and hinds (females) are from October 21st until Feb 15th. There are some estates which are licensed to shoot all year round as well.
Venison - Roe DeerNormally Roe Deer is found in Southern Scotland and Northern England as well as other areas. A small cousin of the red, thrives in a more lush green environment. Often you will see them grazing in low lying areas. Again as the Red Deer they are thriving in number and although they are hunted in much smaller numbers than the red deer they are consistent all year round. The shooting season is for the Stags April 1st until October 20th and then the hinds are October 21st until March 31st.
Wild RabbitRabbit is one of the most traditional wild meats in the UK, we have a long standing tradition of hunting rabbits. Available all year round most rabbit is eaten from June to February. We have fresh rabbit on almost a daily basis all from the local area.
Wild HareHares are growing in number in the UK. Although once seen as a speciality hare is now a regular meat and as such are hunted in the local area. Hare can not be sold from March the 1st until July the 31st but as a rule you should know that Hare is best served only in Months with an e in the spelling !!
