Most of the alternative meats are low in fat and work equally well in all the alternative meat recipes - you'll never be bored swapping them around !!
Our thoughts on preparing game meatWe have divided our recipes into two main cooking categories for you to look at - Traditional and Game meats. Game meats - both Scottish and the more alternative ones from further afield, are recognised as being extremely healthy. Their low cholesterol and fat, yet high iron content, means you have a fantastic selection to chose from as an alternative to red meats. This is of course one of the main reasons that these meats are increasing in popularity. For best results do not over cook, simply because there is very little fat within the meat and excessive cooking easily leads to dry meat! We recommend cooking these meats one grade less than you would normally have your red meat cooked. For best results cook medium/rare to medium (pink in the centre).
Preparing meat for cookingAlthough we are always conscious of maintaining the health aspect of our meats, we also don't want to limit you on the flavour of some cuts. To keep a level of customer choice and in response to your feedback, you will find that some cuts have a limited amount of fat. We will trim the meat to a level where there is a limited element of fat left on. Fat does add flavour when cooking and with roasts especially, can help in keeping the meat moist and succulent. We hope you understand that the limited amount of fat on some cuts is necessary and you always have the option to choose leaner steaks instead.
