Why not try:

  • Pan-Seared Liver with caramelised onions: Sauté the liver slices in a hot skillet with butter until they're seared on the outside but still pink and creamy on the inside. Remove the liver from the pan and set aside. In the same pan, caramelise sliced onions until golden and sweet. Serve the pan-seared duck liver over the caramelised onions and sprinkle with fresh herbs like parsley or chives.
  • Liver Pâté: In a food processor, blend the liver with softened butter, shallots, garlic, and herbs like thyme and rosemary until smooth and creamy. Season with salt, pepper, and a splash of brandy or port wine. Transfer the mixture to ramekins and chill until set.
